1. In a large skillet, brown ground beef over medium-high heat, breaking it up with a spoon. Drain any excess grease. 2. Add chopped onion and minced garlic to the skillet and cook until softened, about 3-5 minutes. 3. Stir in diced potatoes, beef broth, paprika, and dried thyme. Season with salt and pepper. 4. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until potatoes are tender, stirring occasionally. 5. If desired, sprinkle shredded cheddar cheese over the top, cover briefly until melted. 6. Garnish with fresh parsley and serve hot.
