Instructions

1. Roughly chop cucumber, tomatoes, and bell pepper. Thinly slice the red onion. Combine all vegetables and olives in a large bowl. 2. For the whipped feta, crumble 6 ounces of feta into a food processor. Add Greek yogurt and process until smooth and creamy. If too thick, add a teaspoon of milk or water. 3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to make the dressing. 4. Pour dressing over the chopped vegetables and toss to combine. Crumble the remaining 2 ounces of feta over the salad. 5. Serve Greek salad alongside or topped with dollops of whipped feta.
