Instructions

1. In a large bowl, whisk together olive oil, red wine vinegar, lemon juice, minced garlic, oregano, salt, and pepper. 2. Add chicken cubes to the marinade, toss to coat. Cover and refrigerate for at least 30 minutes, or up to 4 hours. 3. If using wooden skewers, soak them in water for 30 minutes to prevent burning. 4. Preheat grill to medium-high heat. Thread chicken onto skewers. 5. Grill souvlaki for 8-10 minutes, turning occasionally, until chicken is cooked through and lightly charred.
