
Ginger Scallion Noodles (Vegetarian)
Simple yet incredibly flavorful, these ginger scallion noodles are a fantastic vegetarian side or light main. The aromatic oil coating every strand makes them utterly addictive.

Instructions
1. Cook noodles according to package directions until al dente. Drain well and set aside.
2. In a heatproof bowl, combine chopped green onions and julienned ginger.
3. In a small saucepan, heat vegetable oil over medium-high heat until it just begins to shimmer and a small piece of green onion sizzles when dropped in. Be careful not to let it smoke.
4. Carefully pour the hot oil over the green onions and ginger in the bowl. It will sizzle vigorously. Let it infuse for a minute.
5. Add soy sauce, sesame oil, sugar, and a pinch of salt to the ginger-scallion oil. Stir to combine.
6. Add the drained noodles to the bowl with the sauce. Toss everything together until the noodles are evenly coated.
7. Serve immediately as a side dish or a light main course.
