Instructions

1. Cut pressed tofu into 1-inch cubes. Toss with cornstarch until lightly coated. 2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add tofu in a single layer and pan-fry for 5-7 minutes, flipping occasionally, until golden brown and crispy on all sides. Remove tofu from the pan and set aside. 3. Add the remaining 1 tablespoon of vegetable oil to the same pan. Add green beans and stir-fry for 5-7 minutes until they are tender-crisp and slightly blistered. 4. Add minced garlic to the pan and stir-fry for 30 seconds until fragrant. 5. In a small bowl, whisk together soy sauce (or Tamari), rice vinegar, sugar, and vegetable broth. Pour the sauce over the green beans. 6. Return the cooked tofu to the pan. Toss everything together to coat with the sauce and heat through. 7. Serve immediately as a main dish or a side.
