
Fresh Ginger Tofu Spring Rolls

Instructions
1. Marinate sliced tofu with grated ginger, soy sauce, and sesame oil for at least 15 minutes. Lightly pan-fry or bake tofu until golden.
2. Prepare all vegetables and herbs. Cook rice vermicelli according to package directions and drain.
3. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for 15-20 seconds until pliable.
4. Lay the softened wrapper flat on a clean surface. Place a piece of lettuce, a few slices of tofu, a small amount of rice noodles, cucumber, carrot, mint, and cilantro near the bottom edge.
5. Fold the bottom edge up over the filling, then fold in the sides. Tightly roll the wrapper upwards, creating a neat cylinder.
6. Repeat with remaining ingredients. Serve immediately with peanut dipping sauce.
