Instructions

1. In a large bowl, whisk together the flour, sugar, baking powder, and salt. 2. In a separate medium bowl, whisk together the plant-based milk, apple cider vinegar, vanilla extract, and 2 tablespoons of vegetable oil. Let sit for 5 minutes to slightly curdle. 3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. A few lumps are fine; do not overmix. 4. Heat a lightly oiled griddle or non-stick pan over medium heat. 5. Pour about 1/4 cup of batter per pancake onto the hot griddle. 6. Cook for 2-3 minutes per side, or until bubbles form on the surface and the edges look set. Flip and cook until golden brown. 7. Repeat with remaining batter, oiling the griddle as needed. 8. Serve immediately with your favorite toppings like maple syrup, fresh fruit, or vegan butter.
