Instructions

1. Preheat oven to 375°F (190°C). 2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5 minutes. 3. Add minced garlic and jalapeño/serrano pepper. Cook for 1-2 minutes until fragrant. 4. Stir in diced tomatoes, water/broth, half of the chopped cilantro, half of the chopped parsley, cumin, paprika, and cayenne pepper (if using). Bring the sauce to a simmer and cook for 5-7 minutes, allowing flavors to meld. 5. Season fish fillets with salt and pepper. Gently nestle the fish into the simmering tomato sauce. 6. Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until fish is cooked through and easily flakes with a fork. 7. Remove from oven, garnish with the remaining fresh cilantro and parsley. Serve immediately with lemon wedges.
