Instructions
1. Finely chop the fish fillets or pulse in a food processor until paste-like.
2. Thinly slice the green beans and kaffir lime leaves.
3. In a large bowl, combine the fish paste, red curry paste, green beans, kaffir lime leaves, fish sauce, egg, and sugar. Mix well.
4. Form the mixture into small, flat patties.
5. Heat vegetable oil in a pan over medium heat. Fry the fish cakes for 2-3 minutes per side, or until golden brown and cooked through.
6. Serve hot with a sweet chili dipping sauce and cucumber slices.
