Instructions
1. In a bowl, combine shrimp, chipotle in adobo, minced garlic, 1 tbsp lime juice, salt, and pepper. Let marinate for 10 minutes.
2. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and opaque.
3. In a small bowl, whisk together vegan sour cream/crema and remaining 1 tbsp lime juice.
4. Warm corn tortillas in a dry skillet or microwave.
5. Assemble tacos: place shrimp in tortillas, top with avocado, shredded cabbage, cilantro, and chipotle-lime crema. Serve immediately.
