Instructions
1. Whisk eggs in a bowl with a pinch of salt and set aside.
2. Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
3. Add chopped onion and green chili, sauté until onions turn translucent.
4. Add ginger-garlic paste and cook for 1 minute until fragrant.
5. Add chopped tomato and cook until it softens.
6. Stir in turmeric powder, coriander powder, and red chili powder. Cook for 1-2 minutes.
7. Pour in the whisked eggs and immediately start scrambling with a spatula. Cook until the eggs are set but still moist.
8. Add salt to taste. Garnish generously with fresh coriander leaves and serve hot with bread, roti, or pav.
