
Dal Tadka
A comforting and hearty yellow lentil soup, tempered with aromatic spices, perfect with rice or roti.

Instructions
1. Wash the dal thoroughly and cook with 3 cups of water, turmeric, and a pinch of salt in a pressure cooker for 3-4 whistles, or until soft. Mash lightly.
2. For the tadka (tempering): Heat ghee or oil in a small pan.
3. Add cumin seeds and asafoetida. Let them splutter.
4. Add chopped onion (if using) and sauté until translucent. Add green chili, grated ginger, and minced garlic; cook until fragrant.
5. Add chopped tomato and cook until it softens.
6. Stir in red chili powder and garam masala. Cook for 1 minute.
7. Pour the tempering over the cooked dal. Mix well.
8. Garnish with fresh coriander leaves and serve hot.
