
Creamy Tomato and Spinach Pasta

Instructions
1. Cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
2. While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add chopped onion and sauté for 3-5 minutes until softened.
3. Add minced garlic and cook for another minute until fragrant.
4. Stir in crushed tomatoes and bring to a simmer. Reduce heat and let cook for 5 minutes.
5. Stir in heavy cream and Parmesan cheese. Season with salt and pepper. Cook for an additional 2-3 minutes, until sauce is slightly thickened.
6. Add fresh spinach to the sauce and cook until wilted, about 1-2 minutes.
7. Add the drained pasta to the sauce and toss to coat. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
8. Serve hot, garnished with extra Parmesan if desired.
