Instructions
1. In a large skillet over medium-high heat, cook the chorizo, breaking it up with a spoon, until fully cooked and crispy, about 8-10 minutes. Drain excess fat and set aside.
2. For the salsa: gently combine diced avocado, red onion, cilantro, lime juice, minced jalapeño (if using), and a pinch of salt.
3. Heat a small amount of oil in a separate skillet over medium heat. Warm tortillas one at a time for 30 seconds per side until pliable and lightly browned. Alternatively, warm directly over a gas flame for a few seconds per side.
4. Assemble tacos: fill each warm tortilla with a spoonful of crispy chorizo, top with avocado salsa, and sprinkle with cotija cheese.
5. Serve immediately with extra lime wedges.
