Instructions
1. For cilantro-lime rice: Combine cooked rice with half of the chopped cilantro and 1 tablespoon of lime juice. Mix well.
2. In a skillet, heat olive oil over medium heat. Add black beans, corn, and fajita seasoning. Cook for 5-7 minutes until heated through and corn is slightly tender. If using frozen corn, cook until thawed and heated.
3. Assemble the bowls: Divide cilantro-lime rice among four bowls. Top with the seasoned black bean and corn mixture.
4. Garnish each bowl with diced avocado, remaining chopped cilantro, diced red onion, a dollop of salsa, and a spoonful of sour cream or yogurt. Serve immediately.
