
Chicken Souvlaki with Orzo Salad

Instructions
1. In a bowl, combine chicken cubes, lemon juice, olive oil, oregano, garlic, salt, and pepper. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
2. Thread chicken onto skewers.
3. Cook orzo according to package directions. Drain and rinse with cold water; set aside.
4. Heat a grill or grill pan over medium-high heat. Grill chicken skewers for 4-6 minutes per side, or until cooked through and slightly charred.
5. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, feta cheese, red onion, and fresh parsley.
6. Serve the grilled chicken souvlaki alongside the orzo salad.
