
Chana Masala Magic
A robust and flavorful chickpea curry, simmered in a spicy tomato-onion gravy. Excellent with rice, naan, or roti.

Instructions
1. Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
2. Add ginger-garlic paste and green chilies. Cook for 2 minutes until fragrant.
3. Add tomato puree, turmeric powder, coriander powder, and cumin powder. Cook, stirring frequently, until the oil separates from the mixture.
4. Stir in the chickpeas, garam masala, amchur powder, and salt. Add about 1/2 cup of water and bring to a simmer.
5. Cover and cook for 15-20 minutes, or until the gravy thickens and flavors meld.
6. Garnish generously with fresh coriander. Serve hot.
