
Caesar Salad with Homemade Croutons

Instructions
1. For homemade croutons: Preheat oven to 375°F (190°C). Cut bread into 1-inch cubes. Toss with 1 tablespoon olive oil and 1 minced garlic clove. Spread on a baking sheet and toast for 8-10 minutes until golden and crispy. Set aside.
2. Prepare Caesar dressing: In a small bowl, whisk together remaining 3 tablespoons olive oil, 1 minced garlic clove, egg yolk, Dijon mustard, Worcestershire sauce, lemon juice, anchovy paste (if using), salt, and pepper until emulsified.
3. Wash and chop romaine lettuce. Place in a large salad bowl. Add half of the grated Parmesan cheese.
4. Pour dressing over the lettuce and toss gently to coat. Add the homemade croutons and toss again.
5. Serve immediately, topped with the remaining grated Parmesan cheese.
