Instructions
1. In a bowl, combine beef cubes with soy sauce, oyster sauce, rice vinegar, sugar, black pepper, and minced garlic. Marinate for at least 15 minutes, or up to 30 minutes at room temperature.
2. Heat vegetable oil in a large skillet or wok over high heat until smoking.
3. Add beef in a single layer, ensuring not to overcrowd the pan. Sear for 1-2 minutes per side until beautifully browned. You may need to do this in batches. Remove beef from the pan and set aside.
4. Add onion wedges and bell pepper chunks to the same pan. Stir-fry for 2-3 minutes until slightly softened but still crisp.
5. Return the beef to the pan and toss everything together for another minute to combine and heat through.
6. Serve immediately over a bed of lettuce leaves and cherry tomatoes, with steamed rice on the side.
