Instructions
1. Preheat oven to 375°F (190°C). Cook pasta according to package directions until al dente. Drain and set aside.
2. In a large bowl, combine ricotta cheese, 1 cup shredded mozzarella, Parmesan cheese, egg, chopped parsley, salt, and black pepper. Mix well.
3. In a 9x13 inch baking dish, spread 1 cup of marinara sauce on the bottom. Add half of the cooked pasta, then dollop half of the ricotta mixture over the pasta. Top with 1 cup of marinara sauce and 1 cup of shredded mozzarella.
4. Repeat layers: remaining pasta, remaining ricotta mixture, remaining marinara sauce. Sprinkle with the remaining 1 cup of shredded mozzarella cheese.
5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes, or until cheese is bubbly and lightly browned. Let stand for 10 minutes before serving.
